I got a new iMac. How to input Chinese? 小花菜文学城

I got a iMac (returned the Mac Pro) today. Does anyone know how I can input Chinese on the Mac? Also, I used to do webcam with msn on PC, but when I downloaded msn on Mac, I can't find the webcam option.
