The August rain brought upon us many wild mushroom. I picked some yesterday when I walked the dogs at the woods. I even discovered some in my kitchen garden under the pine tree this afternoon!
I was planning to add the wild mushroom to the rice at the last stage but forgot somehow. Instead, I cooked an omelette with it.
Add olive oil, 2 slice of garlic and wild mushroom to the pan, stir fry for 5 minutes, then whisk 2 eggs and pour over the mushroom, add salt and pepper, toss it over for 15 second. Voila, it is delicious!
* the wild mushroom i used is called hedgehog mushroom, crunchy and yummy.
