酸辣汤,开胃解馋。 自己在家做只要把握好调味料放的次序和量,很容易就做出大厨水平。 还有餐前的炸面干,要嘎吱嘎吱的蘸着Duck Sauce 一起吃.
酸辣汤中配料因个人口味喜好不同,有加肉丝的,有纯素的,我的版本是纯素的,汤里放的醋用的是保宁醋, 也可选择不同品牌的醋。
配料:
1/4 of Firm Tofu
1 Shiitake Mushroom
5 Black Fungus
1 Small Bamboo Shoot
1 Egg (打散)
Minced Coriander
Minced Scallion & Ginger
3 1/2 Cup of Hot Water for soup base
汤里的调味料:( 要按照这个顺序往汤里加调料)
1/2 Teaspoons Salt
4 Tablespoons Low Sodium Soy Sauce
1 Teaspoon White Pepper Powder
1/8 Teaspoons Sichuan Pepper Powder
2 Tablespoons Corn Starch with 3 Tablespoons water mixed
4 Teaspoons Vinegar
1 Pinch of Mushroom Essence for taste (optional)
1 1/2 Teaspoons Sesame Oil
Duck Sauce:
1 Tablespoon Orange Jam ( 用梅子酱代替也可以)
1 Teaspoon Rice Vinegar
1 Taspoon Sugar
1/4 Teaspoon Low Sodium Soy Sauce
1 Pinch of Ginger Powder
酸辣汤做法 :
- Shredded the 1/4 of firm Tofu, Shiitake mushroom, black fungus, and bamboo shoot
- Beaten the Egg
- Minced coriander , scallion and ginger
- Adding oil to very hot pan, and saute minced scallion and ginger
- Stir fry shredded mushroom till soft, add hot water to the pan and wait water to boil
- Add salt & low sodium soy sauce to boiling soup
- Add white pepper powder & Sichuan pepper powder to boiling soup
- Add 1/3 corn starch water for three times to the soup, stir the soup for a few seconds, then add vinegar.
- Continue to stir the soup, then add 1 pinch of mushroom essence for taste
- Reduce fire to low heat and add egg drops to the soup, wait egg drop to cook through.
- Sprinkle minced coriander and sesame oil
