Using EAD(485) work at company persistence 文学城

I need your suggestions on my situation:

My 140 approved by VSC two months ago (EB1-EA) and I-485 pending. I got my 485-based EAD last week. (All DIY).

I am now working as a postdoc at a university with H1B visa. Now I got a postdoc position from a company, which I am very interested and may transform to a full-time job in the future. So if I use my EAD to work for the company, is it too risky considering it is not a full-time position? What is the chance for me to get 485 approved and usually how long will it take?

Since the company wants me to start immediately, I don't have time to apply for new H1B visa.
