避风塘炒蟹|Hongkong Garlic Fried Crab
准备工作之一/Preparation #1
蒜:23克;切小块,清水过滤
garlic: 23 grams; diced and rinsed with water
准备工作之二/Preparation #2:
熟螃蟹腿:1000克;洗净凉干,挂上粉糊
cooked crab legs: 1000 grams;washed, dried and coated with batter
粉糊:50克面粉 + 5 克淀粉 + 2克盐
batter: flour 50 grams + corn starch 5 grams + salt 2 grams
锅中放油,中小火炒蒜粒,至金黄。滤出备用。
Add garlic pieces to vegetable oil, stir at low to medium heat, until golden brown. Filter the garlic dice for later.
大火炸蟹,至金黄。盛出备用。
Fry crab leg with high heat, until golden brown. Take out from the pot.
干辣椒:1个,切块。

洋葱:50克,切丁
onion: 50 grams, diced
转中小火,加入面包糠,翻炒。
Turn to low to medium heat, add bread crumbs, stir.
面包糠:38克
bread crumb: 38 gram
加入炒好的蒜粒。
Add cooked garlic pieces.
加入炸好的螃蟹。大火大力翻炒。
Add fried crabs, turn to high heat and aggressively stir.
